Brett yeast was used to brew the Rebelse Strop: a wild yeast that ensures that the flavor of the beer continues to evolve, even after bottling. A yeast that, doesn't fall in line obediently but just does its own thing. So this dark blond specialty beer with contrary temperament certainly didn't steal its name! Scent: Earthy aromas first fill the nose and then give way to a slightly fruity scent. Taste: The unruly Brett yeast creates a true taste sensation that evolves with time. A young Rebelse Strop thus acquires a slightly more complex taste: fruity, hop bitter and with a slight acidity. Rebelse Strop that is several months old has a slightly softer, rounder taste.

Also in barrel, there is a secondary fermentation while the Duvel rests for two weeks in the warm room and a maturation of eight weeks in the cold cellar. So the carbon dioxide content (8.5 g CO2 per liter) as well as the alcohol content is identical, just like color, bitterness and taste.

To keep the soul of the abbey alive in the beer, Paix Dieu was brewed only during the full moon. Result? A smooth tripel with a full character, craft brewed according to the pure traditions of Belgian abbey beers. A symbol indicates at which moon your beer was brewed. It is a 100% natural beer using only local ingredients. The water is taken directly from the source of the brewery and the yeast is grown by themselves. In the nose, it reveals delicate fruity and spicy aromas. Paix Dieu stands out for its golden color, under a creamy, generous and consistent foam. In the mouth, it reveals all its character and develops a long and fine bitterness, supported by a hint of hops.

After drinking, it leaves a nice lacework in the glass. But the real memory of this balanced Trappist beer with smooth mouthfeel is undoubtedly the long, dry finish. The monks of Westmalle have been brewing a dark Trappist beer alongside their existing meal beer, the Extra, since 1856. In 1926, they modified the recipe and brewed the beer a bit heavier by doubling the ingredients. This is how the beer got its name Dubbel, although many often refer to it simply as Trappist.
