      Proud, stubborn and full of character, but at the same time very unique because of its rebellious temperament. The Rebelse Strop stands for a stubborn beer that impresses. Brett yeast was used to brew the Rebelse Strop: a wild yeast that ensures that the flavor of the beer continues to evolve, even after bottling. A yeast that, doesn't fall in line obediently but just does its own thing. So this dark blond specialty beer with contrary temperament certainly didn't steal its name! Scent: Earthy aromas first fill the nose and then give way to a slightly fruity scent. Taste: The unruly Brett yeast creates a true taste sensation that evolves with time. A young Rebelse Strop thus acquires a slightly more complex taste: fruity, hop bitter and with a slight acidity. Rebelse Strop that is several months old has a slightly softer, rounder taste.

      Is a live beer. They use noble hop varieties and unique yeast varieties. They master the process of top fermentation, natural lagering and secondary fermentation like no other. The taste of their beers is guaranteed to keep evolving for a long time. Fourchette is delicious with all kinds of dishes. A scientific analysis of Fourchette shows that people will perceive its taste mainly as fruity (yeast culture) and floral (wheat beer). Connoisseurs also discern flavors of citrus, coriander, clove and grapefruit.

The entire brewing process, plus lagering and fermentation, are exactly the same as in a bottle. Also in barrel, there is a secondary fermentation while the Duvel rests for two weeks in the warm room and a maturation of eight weeks in the cold cellar. So the carbon dioxide content (8.5 g CO2 per liter) as well as the alcohol content is identical, just like color, bitterness and taste.

      The Extra may have a low alcohol content of 4.8%: it is surprisingly full-bodied in taste. Moreover, this golden-blond Trappist beer has a very refreshing and thirst-quenching character. With its fruity notes and rich aromas, the Extra represents a taste experience that is Westmalle to the max.True to its brewing philosophy, the Extra is brewed with the purest ingredients: selected barley varieties, a balanced blend of hop flowers, home-grown yeast and pure water that comes from the deep Diestian layer. It is a high fermentation beer, including the typical bottle fermentation. In 1836, the Westmalle Trappists decided to brew their own. They needed their own, local beverage to accompany meals. This first resulted in a dark table beer. We know from writings that a white beer appeared some time later. At the beginning of the 20th century there was talk of a blond 'Extra-Gersten' beer: a precursor of the Extra. In all that time, a lighter variant was invariably on the table of the monks themselves. They gladly granted the Dubbel and Tripel to the outside world, but within the abbey walls they opted for sober quality that better suited their lifestyle.

      This beer used to be produced at Paix Dieu Abbey, where the lunar calendar played a crucial role in the brewing process. To keep the soul of the abbey alive in the beer, Paix Dieu was brewed only during the full moon. Result? A smooth tripel with a full character, craft brewed according to the pure traditions of Belgian abbey beers. A symbol indicates at which moon your beer was brewed. It is a 100% natural beer using only local ingredients. The water is taken directly from the source of the brewery and the yeast is grown by themselves. In the nose, it reveals delicate fruity and spicy aromas. Paix Dieu stands out for its golden color, under a creamy, generous and consistent foam. In the mouth, it reveals all its character and develops a long and fine bitterness, supported by a hint of hops.

      Is a dark, reddish-brown Trappist beer and, thanks to secondary fermentation in the bottle, contains a rich and complex flavor. It is characterized by notes of caramel, malt and fruity esters reminiscent of ripe banana. The first encounter with Westmalle Dubbel is a creamy thick head of foam. After drinking, it leaves a nice lacework in the glass. But the real memory of this balanced Trappist beer with smooth mouthfeel is undoubtedly the long, dry finish. The monks of Westmalle have been brewing a dark Trappist beer alongside their existing meal beer, the Extra, since 1856. In 1926, they modified the recipe and brewed the beer a bit heavier by doubling the ingredients. This is how the beer got its name Dubbel, although many often refer to it simply as Trappist.

The Kitchen

Our restaurant is open all days from 12:00, you can order until 20:00, both inside and on our terrace.
On Tuesday the restaurant and terrace are closed. 

On December 25 and 26, our restaurant will be closed so that our staff can enjoy these days with family and friends.
On December 31, our restaurant will be open until 5 p.m. On January 1, the restaurant will be open.
